For four generations the Scibilia family has been in the olive oil sector but only since 1984, when the name OLITAR s.r.l. was adopted, the family has begun to work in the area of Tarquinia whose landscapes have always been characterised by olive groves, as evidenced by the frescoes of the painted tombs in the Etruscan necropolis of Monterozzi (UNESCO World Heritage Site since 2004). At the beginning it was a family-run business situated between Tuscany and Latium which only processed the olives of local producers. Over the years and with the significant increase of requests, we have also set up a laboratory for bottling and packaging, thus launching the marketing of a high quality product obtained in a traditional way called “DON ANGELO” in honour of the founder of the generation that today is running the olive oil mill.
Today we are committed to ensuring consumers the quality of our extra virgin olive oil, its flavour, genuineness, aroma and taste recalling fresh olives. But the secret of a higher quality olive oil is, in addition to the processing techniques, the insight and experience of the olive oil expert who is able to get the best from olives by observing the seasons and intervening in some of the process parameters. An increasingly demanding and competent clientele together with the experience gained over the years encourages us towards continuous improvement and therefore the oil mill is always evolving. The purpose of the company is improving more and more the quality of the final product through modern technologies assuring reliability and shorter waiting times for pressing, maintaining the quality of the traditional processing.
